The Golgi apparatus is the organelle that plays a crucial role in packaging and shipping proteins. It functions as the cell's processing and distribution center, modifying proteins received from the endoplasmic reticulum, sorting them according to their destinations, and packaging them into vesicles. These vesicles then transport the proteins to their proper locations within or outside the cell.
